For today’s recipe, I’d love to share this quick, easy, and super tasty Peruvian Chicken and green sauce recipe I made using my Deluxe Air Fryer by Pampered Chef. If you’ve been looking to purchase an Air Fryer, this particular model can’t be beaten.
If you don’t have an air fryer, that’s okay, you can still make this recipe using either a roasting pan or any casserole dish you may have on hand. You’ll want to omit the instructions that discuss the rotisserie spit.

How to clean

The secret to making this recipe is to season the chicken, cover and let it sit in the refrigerator overnight for the seasons to marry. You’ll also want to make sure you season the inside cavity of the chicken as well.

Rotisserie Peruvian Chicken & Peruvian Green Sauce
Equipment

Ingredients
Peruvian Rotisserie Chicken
- 1 whole 4lb chicken
- 2 tbsp olive oil
- juice from ½ small lime
- 2 tsp sugar
- 1⅔ tsp ground cumin
- 1 tsp ground Hungarian Paprika
- 1 tsp oregano
- 1 tsp salt
- ½ tsp black pepper
- 4 garlic cloves, pressed
Peruvian Green Sauce
- 1/2 medium bunch cilantro with stems (about 24 sprigs)
- 1 jalapeno, seeds removed
- juice from ½ small lime
- 2 garlic cloves, pressed
- ¼ cup grated Parmesan cheese
- 1 tbsp white vinegar
- ¼ tsp salt
- ½ cup mayonnaise
Instructions
- Pat the chicken dry with a paper towel. Combine the remaining chicken ingredients in a small bowl and coat the chicken with the mixture.
- Tie the legs together with a 12" piece of cooking twine. Tie the wings against the breasts with a 24" piece of cooking twine. Insert the rotisserie spit through the legs where they're tied together and through the cavity, centering the bird on the spit. Insert the forks securely into the chicken and tighten the screws.
- Turn the wheel to select the ROTISSERIE setting; press the wheel to select. Turn the wheel to adjust the time to 45 minutes. Press the wheel to start. When the timer is up, use the retrieval tool to remove the spit. Cook until the internal temperature reaches 165°F (74°C), adding more time if needed
- Meanwhile, combine the sauce ingredients in a blender or food processor and pulse until combines. Serve the sauce with the chicken



This was the maiden voyage of my air fryer, and I was really shocked to see how well it performed, and even more impressed with how amazingly moist and delicious this Peruvian Chicken turned out.
